DIY: Low carb fluffy pancakes
As someone on a low carb high fat diet, I am always looking for delicious recipes that my entire family will eat and enjoy without feeling like they are eating low carb too. Because let's face it, low carb doesn't always taste as good as the more carby option.
I purchased some coconut flour a while back and the first time I made coconut pancakes, it tasted way too eggy.
I experimented around a bit and came up with this better version. It is fluffier, tastier and most importantly, EVERYONE in my household enjoyed eating them.
The best part is that with the exception of coconut flour which you have to purchase, the other ingredients are items you likely already have at home.
INGREDIENTS:
4 oz Cream cheese
4 Eggs
4 TBS Coconut Flour
1 TSP Vanilla extract (or a different flavored extract of choice)
2 TBS Stevia (or your sweetner of choice)
Optional: Sugar free syrup. See the brand I used below.
PREP TIME:
15-minutes
YIELDS:
7 average sized pancakes.
1. Mix all ingredients in a bowl.
2. Spray pan with cooking spray.
3. Add 2 TBS of mixture into pan.
4. Cook on each side for approximately 3 to 4-minutes on med-high heat.
5. Serve with your favorite syrup.
